Weekend cooking: empanadas

At one of our neighborhood get-togethers last fall, one of our friends brought empanadas filled with seasoned beef and cheese that she served with peach salsa and guacamole and they were out of this world!  After listening to several of us beg for instructions, she invited us over to learn how to make them.  They were fun and easy to make!

  • We started with refrigerated pie dough, but you can make your own.  Cut the dough into circles – we used this handy tool, so ours were 3½ inches in diameter.
  • Brush the circles with beaten egg.  Put a small amount of filling on one side of the circle.  Fold it in half, and crimp.  Brush with a little more egg and bake at 400º until brown.  It’s that easy.
  • You can get creative with your fillings, but we used barbecued chicken, chicken pot pie filling, sausage in marinara sauce, lemon curd and cooked apples.  This is a great way to get rid of some leftovers!
  • We cut out small shapes and put them on the top of each empanada in order to identify their fillings.
  • Once they’re baked, these freeze well.
  • They’re great appetizers or you can serve them with other dishes, like soup or salad.

    Mmmmmm, these look to delicious. I love the “handy tool” too. It almost looks like a cookie cutter. I’m trying to imagine the peach in there. That’s really different.

    Your empanadas look delicious! I wouldn’t think to include cooked apples, but I bet that adds a wonderful flavor.

    I’m totally making these for my next get-together. My friends will be so impressed! And, it sounds so delicious to top them with guacamole and mango salsa. Yum.

    Those look delish! I make empanadas with leftover turkey and 3 bean chili (I don’t eat red meat), strips of cheese, and the dough of two Pillsbury crescent rolls, using a fork to seal the edges. I never thought to try BBQ chicken before, but that’s a great idea!

    Oh – these sound like a great winter recipe to prepare on a Saturday and have instant meals ready to go when needed. I will definitely favorite place this one!

    Empanadas rock! It is cool for to know that you can use the handy dough. I can think of 1001 things to put in them. MMM.. good stuff. Very very popular in California! 🙂

    I have never made these before, but they do look great! They are nice and golden, and look like they would make a wonderful snack or meal, and I am really intrigued by the peach salsa idea!! Thanks for posting this one~!
