Fall Festival Recipe Exchange – Country Club Squash

I’m a day late with this but, the Fall Festival Recipe Exchange is the brainchild of My Friend Amy – go to her blog to see links to everyone who’s participating.  I got this recipe from my sister so long ago, the paper she wrote it on is yellowed and stained.  Everyone loves this recipe – even kids.  You can put this together ahead of time and bake it right before you’re ready to serve it.

Country Club Squash

2 pounds yellow squash, sliced

½ cup chopped onion

½ cup water

1 (8 ounce) carton sour cream

½ teaspoon salt

¼ teaspoon pepper

¼ teaspoon dried whole basil

1 cup soft breadcrumbs

½ cup (2 ounces) shredded medium cheddar cheese

1/3 cup butter or margarine, melted

½ teaspoon paprika

8 slices bacon, cooked and crumbled

Cook squash and onion in ½ cup boiling water until tender; drain and mash.  Combine squash mixture, sour cream, salt, pepper and basil; pour into a greased 2 quart casserole dish.  Combine breadcrumbs, cheese, butter and paprika; sprinkle over squash mixture.  Top with bacon.  Bake at 300º for 20 minutes.

    My mom just gave me a whole bunch of squash, so I have to try it out. Any excuse for a little bacon.

    Your summer squash recipe is quite different from mine, but it sounds yummy. If my garden hadn’t already froze I’d be trying this. We covered the garden at the first hint of frost, but then another frost came along and even though things were covered the second frost got them. Darn!

    I think this is a squash recipe that most of my family will like – although I know it would negate the effect of my Vitorin : )

    bacon? did someone say bacon? i’m a bac-a-holic. i lurve bacon…but not sure about bacon, squash, and sour cream! kathy, if you say it’s good, i’ll take your word for it. i have the palate of a 7-year-old, so i’ll stand on the sidelines with my slab o’ bacon and watch! 🙂

    Mmmm, this sounds absolutely scrumptious! I also like the fact that it uses dried basil–who has fresh basil on hand in the fall and winter?
