Weekend Cooking: Tupelo Honey Cafe

One of our favorite places to eat in Asheville is Tupelo Honey Cafe, so I was beyond excited when I heard they were creating a cookbook!  I’m thrilled to say this cookbook met my expectations and then some.  The cookbook includes more than scrumptious recipes, it includes facts and photos about Asheville, so it will not only make you hungry, it will make you want to head to the mountains of North Carolina.

The cookbook is divided into chapters by recipe type with titles such as The Larder (sauces, salsas, gravies, etc), Fish Out of Water (seafood),  The Threes (vegetables), and Chicken Seven Ways, of We Still Lay.  Just the titles give you an idea of the personality of this great restaurant and its cookbook.  The back of the book includes a list of resources, an index, and a conversion table.  There are also lots of gorgeous photos, but not every single recipe is pictured.   Beer and wine suggestions are included with each dish – the “pairings are intended to wake up your taste buds, complementing the dish and bringing its best flavors forward.”

When I received this cookbook, the first thing I did was flip through it to see if my absolute favorite Tupelo Honey Cafe dish was included and I was thrilled to see it is.   It didn’t take me long to whip up a batch of warm pimento cheese and, I have to tell you, it is to die for.  I wanted to lick the bowl when we were done.  Believe me when I say it tastes much better than it looks in that picture.  I’ve made this for Carl and myself, my mother, and some friends and everyone has loved it.

Warm Pimento Cheese and Chips

8 ounces cheddar cheese, shredded
½ cup mayonnaise
1 tablespoon Dijon mustard
1 tablespoon stone-ground mustard
1 teaspoon mustard powder
¼ teaspoon sea salt
¼ teaspoon freshly ground black pepper
2 tablespoons minced fresh parsley
½ cup finely diced roasted red bell pepper

Tortilla chips for serving

Combine the cheese, mayonnaise, Dijon mustard, stone-ground mustard, mustard powder, salt, pepper, parsley and roasted bell peppers in a large bowl.  Transfer to a microwaveable dish and microwave for about 20 seconds, or until hot.  Or put in a baking dish in a preheated 350ºF over for about 15 minutes, or until heated through.  Serve with tortilla chips.  Makes 2 cups.

    I’m so glad you discovered this cookbook! Although I have to admit that recipe doesn’t do too much for me! LOL! I’ll just take your word for it that it’s delicious!

    cheese…melted…what more does one have to say..nothing!
    I would love to head back to the mountains of North Carolina anyhoo, and if I ever make it back I must go to the Tupelo Cafe.

    I’ve always loved the pimento cheese that comes in the little jars. I never thought of making it myself. This sounds good and now I’m going to have to try it. Thanks for sharing. The book sounds good too.

    This cookbook sounds wonderful! I’m so glad you reviewed it as I remember seeing it in your Monday post about the books you received the previous week and I wondered about it.

    I didn’t know there was a Tupelo Honey Cafe but the name instantly put me in mind of the Van Morrison song which I love. It’s a good enough reason for me considering getting a copy of this cookbook & now that I know it’s a good one, I think it’s a must! This recipe looks & sounds delicious.

    If I made that Jason wouldn’t get to eat any and I’d gain 5 pounds! Kind of like the cheesecake from the Cheesecake Factory we brought home last night!

    OMG, I know what I’m going to make Mr. BFR next time he wants a snack before dinner or when watching TV. How easy, easy is this? I know we’d have this finished in about 3 seconds.

    I’ve never been to Tupelo Honey Cafe, but I’ll have to make it a point if I find myself in Asheville again!
